Michael, thank you for doing that, I found it very interesting. I've often wanted to do that for the Eastern Orthodox Liturgy (which would be the same as your Byzantine Catholic liturgies), but haven't had the time to do so. Though these liturgies may differ in places (different expressions of the same faith), they draw from the same roots and have the same foundation.
I would argue that Eucharist isn't a Passover meal though. Instead it's a New Covenant instituted by Christ and passed down by the apostles in the Eucharistic Liturgy. However, I see Robert has already chastised us above for getting off topic, so I'll stop there ;)
